
I found this recipe through a friend of a friend decades ago. I won’t bore you with the back story because nobody likes a chatty food blogger, but let’s just say it’s become a staple in my house when someone is feeling unwell—usually me.
When you’re by yourself, and you get sick, there’s no one there to check on you or bring you a cup of tea. So, I always order a grocery delivery with things that I know will make me feel better, including what I need to whip up a batch of this soup.
It only takes a few minutes, which is great if you feel like you’ve been pulled through a knothole backwards.
You can make it nourishing, or you can kick up the heat to help loosen up a real whopper of a head cold. Because it’s so easy and quick, it’s a great way to shower a little love on someone you care about when they’re under the weather, too.

10-Minute 4-Ingredient Feel Better Chicken Soup
Ingredients
- 1 Rotisserie Chicken
- 1 12 oz jar of salsa (choose a heat you're comfortable with)
- 1 can Mexicorn, drained (corn, pablano and red peppers)
- 1 32 oz box of chicken broth
Instructions
- Pour the broth, the salsa and the can of Mexicorn into a pot and bring to a simmer over medium heat.
- While the broth is heating, remove the breast meat from the chicken and shred with a fork. Add to the pot and stir everything together.
- Serve when the soup is hot.
